I just bought Besiege and running it on my Mac. But the text in the game is not very legible. Especially in the How to Build dialogue. I can't read it enough to learn how to play the game. This is in both full-screen and windowed views. Are there any graphics settings that I can change to make the text more readable? Screenshot

This is probably resolution related, what resolution are you trying to use?

I've also had the same problem as tokyodan - Only then to find the small cog "settings" icon on the main menu where you can change the screen res (which fixed the text issue)
As a graphic designer I love the styling of it but I totally missed the two buttons on the main menu - mainly due to have too much fun playing with the world.

I do not think it has anything to do with Screen Resolution, I run on a 4K monitor and has no problem reading anything.

I do not think it has anything to do with Screen Resolution, I run on a 4K monitor and has no problem reading anything. Its to do with having a resolution that doesn't fit your screen and then stretching the game to fit your screen.
