Would these act similarly to cannons in that they fire once? or more like springs in that you can fire them then retract them back to their launchers? They have these! They'd called houses/windmills

Really like all these ideas.
I can't imagine harpoons would be too difficult to implement as grabbers already exist. Though it'd make more sense to, instead, add a really slack connecter (i.e. rope or chain) and then leave it up to players to make ballistae or other projectile-launchers in order to propell them.
Your two environmental hazards are something I hadn't thought about. This would greatly increase the impact of luck and consequently the need for contingency plans. Our machines would then need to be much more elaborate and well-thought through! Exploiting the fire-resistance in this game is a really good idea. I can imagine a level where you'd have to build some sort of ironclad battering ram to ward off the pitch and then proceed to ram down the gate/target.
And extra buildings can never hurt! Though I imagine that different worlds will bring different styles and imagined cultures and therefore a greater variety of constructs to destroy (not just difficulty, but in aesthetics too).

you can already make harpoons, kinda. Just put down a row of blocks, delete some in the middle and connect the ends with a spring, attach a grabber at the front. Launching it is the real issue.

They'd called houses/windmills By the Harpoons/Linkshots Idea I was thinking about something with a line that allows you to shoot to something and then the blade will back at his place to allow to shoot it several times until it will break. and by wooden castles I was meaning something like this: www.panoramio.com/photo/54019877
